What exactly does the food & beverage management include?
Selection and contracting of F&B vendors, municipal permits, insurance, food-safety compliance, build-out of the food zone, setup logistics and supervision during the event. At Buenos Aires Trap we coordinated 15 stalls between food trucks and fixed stalls for 120,000 attendees. At Expo Autos CeNARD we handled everything autonomously: 5 food trucks, permits, insurance and food safety, with no third parties.
How do you handle permits and licensing?
We manage all the paperwork: municipal permits to operate food stalls on site, civil-liability insurance, compliance with food-safety regulations and whatever it takes to keep the operation by the book. At Expo Autos CeNARD we handled it autonomously. It is one of the parts that takes the most time and adds the most value for the client.
Can you handle events of different scales?
Yes. At Buenos Aires Trap we managed a food zone for 120,000 attendees over 2 days with 15 stalls. At Expo Autos CeNARD we ran 5 food trucks for 4,000 people. And at the Fiesta Nacional de la Manzana we built the food zone for a regional festival in Patagonia. We adapt to the scale while keeping the same management standard.
What food formats can you set up?
Food trucks, fixed stalls, corporate catering, beverage bars, table service and full food zones. We pick the formats that best fit the type of event, the audience and the budget. We can work with vendors you already have or source new ones as needed.
Do you include visual design and photography of the food zone?
Yes. At the Fiesta Nacional de la Manzana, on top of the F&B management, we designed the visuals for the stalls’ LED screens and shot the photo coverage of the area. We have in-house visual production, which lets us deliver more than just coordinating food.
How much time do you need to plan an event's catering?
It depends on scale. For small or corporate events, 3 to 4 weeks. For massive festivals like Buenos Aires Trap (120,000 people), 2 to 3 months ahead. The time covers vendor selection, permits, insurance, food safety, layout design and setup logistics.
